This black olive patè is one of the products we are most proud of — and the one that challenged us the most. We start with Coratina olives, the cultivar native to our land, and cure them the oldest way we know: submerged in a mix of olive, almond and cherry wood ash with water, with no chemical additives whatsoever. It is a slow, attentive process, but the only one that gives the olive back its full, authentic flavour.
Once ready, we pit them by hand — one by one — and preserve them in extra virgin olive oil.
The result is a dense, fragrant patè with the bold character that only an olive treated this way can have. Perfect on toasted bread, with aged cheeses, or to enrich sauces and dressings.
